OK kids, I’m changing course. This blog has failed to develop into anything because I have not found my focus or passion. Good news (for me at least)! I’ve figured it out. Since I have a new focus and commitment on myself that’s exactly what I am committing to the blog.
For the past month and a half I been extremely conscience of my eating and exercise habits and I am finally seeing and FEELING results. They may be minor in appearance but they are large to me. I have finally stop just reading,thinking or pretending when it comes to my health and weight. I am already so lucky that I do not have any health issues. However, weight is such that I will if don’t start moving more!
So this blog is now my journey to a healthier lifestyle and chance for many long and wonderful years with my sweet and loving family. I know, everybody has a blog about this stuff. Well, good! We should all be more conscience about a healthier mind and body! Let’s all share the journey together. I hope this time I can stick with the program!I am feeling confident that I can.

Please take the time to look at the devastation on the Louisiana coastline. The devastation is unacceptable and horrifying. Sixty-five miles of oil in the fragile marshes and along the coastline. Really look at these photos. Imagine if this were your state. Imagine those are your children on that beach.
Please support investing in cleaner, renewable sources of energy!

I love to make yummy, healing, energizing soups. Forget the canned variety and create a magical combination with ingredients in your fridge! This is one of my favorites (my husband and oldest son love it too!). I love this soup because it has a creamy texture and spicy taste. I also love to include nutrient rich spinach in any soup I can. The best part is I slip it in the soup and my veggie avoiding family never knows. This soup is filled with awesome nutrients and minerals guaranteed to make you feel souper!
Green Curry Cauliflower Soup
32 oz Veggie broth
1 cup water
1 head of cauliflower
1 large yellow onion, quartered
1 overflowing cup of spinach
2 cloves garlic, halved
2 tbls green curry paste
1 can light coconut milk
10 or so fresh purple or Thai basil leaves, whichever you can find
Pour veggie broth and water into large pot. Bring to a boil. Reduce to a simmer for about 15 minutes or until veggies are tender. Add basil and spinach. Remove from heat. Let cool.
Ladle the veggies and broth into a blender (you may have to do this in batches). Blend and return blended mixture to pot. Add green curry. *I love lots of spice so 2 tbls is perfect for me. But if you like things milder only add 1 tbls and taste it before adding more.*
Finally, add the lite coconut milk. Warm it up and enjoy!

I keep mine in my purse and use it everyday! I hardly ever need to use the store’s plastic or paper bags. Of course, I have my larger grocery bags for heavy duty shopping, but my Chico Bag is available for when ever I need to pick up a couple items anywhere. Love it!
